Before that i want to say that you have to use your common senses before taking the portrait. look at the back ground, the lighting of your set, age, skin tone all these things are very important.
now lets assume that you are going to take a snap in the daylight. but there is no sufficient back ground. so you have to manage it anyways. Remember that distant object / background always makes the portrait awesome. so in the day light if you want to use the popular 18-55mm lens which is actually not a portrait lens but can do awesome job for you. my suggestion in this situation you have to zoom the lens full and come closer as possible to the object. so that the focusing point become more accurate and the back ground become as blur as possible.

In the night its a bit different. try to place the object as far as possible to the lighting. the main reason is that it will make the lights blur and separately they will look like big round shape balls. and believe me when you will see the image its gonna be awesome.

In case of taking a portrait in during the wedding ceremony, its totally opposite. you can't move the object, you can't change the lighting so you have to move with your camera and select the perfect position. and i have to say that wedding portraits can't be great with the 18-55mm lens. you need to buy a portrait lens for wedding photography. but with the 18-55mm lens you can make it better if you follow some instructions. you should concentrate on the objects only not the background. try to take portraits form a distant position not from so close like other portraits. try to take the dress, the ornaments and accessories. it will cover the lacking of your lens. during editing these images try to make the lighting deem and slightly blackish. the Golds will definitely be enlightened by doing these. check my other blog about portrait photography ideas.
